Imported from Nyaker, Sweden
Year after year, Nyåkers' gingerbread wins the big consumer tests. The explanation is in the secret recipe from 1952, still baking gingerbread with the same craftsmanship and attention to detail. Nyåkers mixes the spices by hand and punches the cakes with large rolls of bronze. The result is a gingerbread as close to homemade as you can get.
Nyåkers Pepparkakor was founded in 1952. At the time, it was an ordinary local bakery, supplying a variety of pastries. The bakery’s bread wagon travelled between farms selling to households. In 1954 tragedy struck when the bakery burned down. Initially, it was unclear whether it would be rebuilt.
The owners eventually decided to re-invest in the company, and they built a completely new bakery with continuous line ovens. They specialized production to a single product, gingersnaps. The investment was a success and they soon became one of the two market leaders. They expanded their product range with almond buns and cardamom cookies, and eventually many more products were added. One success led to another, and the bakery soon became too small to meet demand. Over the years the bakery has been expanded eight times. In recent years, plain cookies have become an increasing part of company sales.
The company is the second largest on the Swedish market for gingersnaps and an increasing share of production is exported to countries in Europe and North America.
